Yummy Apple Tart

Let's bake with Chef Otja! This time he's got a recipe for a true classic — the apple tart. Easy to make and oh so yummy! 


Ingredients

FOR THE DOUGH
tablespoon sugar
½ tablespoon kosher salt
1 cup and 2 tablespoons all-purpose flour, plus more for dusting
½ cup chilled unsalted butter, cut into 6 pieces

FOR THE TART
All-purpose flour (for the surface)
4 tablespoons chilled unsalted butter
3–4 large apples
1 tablespoon lemon juice
4 tablespoons sugar
Pinch of kosher salt
250 g cottage cheese, 100 g sour cream 

Instructions

FOR THE DOUGH
Toss the sugar, salt, and 1 cup plus 2 tablespoons of flour in a large bowl to combine. Add the butter and toss until it is coated with the dry ingredients. Drizzle with 3 tablespoons of ice water. Mix the ingredients until they are evenly dispersed. Turn out the dough onto a lightly floured surface. Roll it until it flattens and looks smooth, matte, and creamy. Put the dough in a refrigerator and chill it for at least 30 minutes.
FOR THE TART
Preheat the oven to 200°C. Put the dough on a lightly floured surface and roll it into a round form, then press it into the tart pan with your fingers. Clear the extra dough from the edges using a roll pin or other suitable utensil. Chill the crust until it's ready to use. 
Cook the butter over a medium heat for about 3–5 minutes. Set it aside.
Slice the apples and transfer them to a medium bowl. Add lemon juice, sugar, salt and toss until the apples are coated. 
Pour the mixture of cottage cheese, sour cream and sugar onto the crust. 
Add the apples and arrange them into concentric circles. Drizzle brown butter over the apples.
Bake the tart for about 50–60 minutes until the crust is a deep golden brown and the apples on the surface have softened. Do not underbake. Let the tart cool and then cut it into wedges.

 


And there you have it, a perfect, mouth-watering apple tart — and it's ready to eat!
